Roasted Potatoes 1 1/2 lbs. small red potatoes, quartered - or, cut up everyday potatoes, leave unpeeled if you like 1 Tablespoon olive oil 1/2 teaspoon salt 1/4 teaspoon pepper 1 Tablespoon butter or margerine 1 Tablespoon fresh, chopped, or 1 teaspoon dried tarragon Place rack in lower third of oven. Preheat oven to 450 degrees F. Spray cooking spray on a cookie sheet or in a 9x12 pan. In a bowl, toss the postatoes with the olive oil, salt and pepper. Spread single layer of potatoes in pan. Roast about 30 to 35 minutes until potatoes are golden brown and tender. Return the potatoes to the bowl, and add the butter and tarragon. Mix well and serve.
