Fruit Pudding Cake Fruit: Apple- 4 apples peeled, cored, sliced 1/4 cup sugar OR Frozen fruit- 1 300 gr package partially thawed 1/4 to 1/2 cup sugar depending on type of fruit Cake: 1 1/4 cups flour 2 tsp. baking powder 1/2 tsp. salt 1/4 cup shortening 1/2 cup sugar 1 beaten egg 1 tsp. vanilla 2/3 cup milk Preheat oven to 350. Prepare the fruit and place in the bottom of a buttered 8 inch square pan. Mix together the flour, baking powder and salt, in a small bowl. In a large bowl, cream the shortening. Gradually add the sugar, beating well. Add egg and vanilla and beat until fluffy. Add the dry ingredients alternately with the milk, blending well. Pour into the pan, on top of fruit. Bake until toothpick inserted in center comes out dry, about 40 minutes. Serve warm.
