Homestyle Potato Casserole 2 cups shredded potato 1 cup finely chopped onion 1 cup shredded carrot 2 Tablespoons butter or margerine 1/2 tsp. salt 1/4 tsp. white pepper 1 1/2 cups whipping cream Chopped fresh basil or parsley for garnish. In a buttered 1 1/2 quart casserole, alternately layer the potatoes and the onion and carrot. Dot the layers with butter and sprinkle with salt and pepper. Pour the cream over the final layer and smooth the top. Cover. Bake at 350 F. for 45 minutes. Remove cover. Continue baking for another 15 minutes, until the top is just beginning to brown. Sprinkle with the basil or parsley if used. Serve.
