Pancakes 1 1/2 cups flour 1 to 2 tablespoons sugar 3 teaspoons baking powder 1/2 teaspoon salt 1 beaten egg 1 3/4 cups milk 2+ tablespoons vegetable oil Mix the first 4 ingredients together. Mix the egg and milk and vegetable oil in a separate bowl. Add the liquid to the dry ingredients. Stir just until combined. Heat skillet until drops of cold water dance across it. Add some vegetable oil. Using about 1/4 of a cup of batter per pancake, pour batter into skillet. When the edges of the pancakes are bubbled, turn and finish cooking the other side. Serve hot, with butter and maple syrup, pancake syrup, fruit, jam or jelly, peanut butter, butter and white sugar. Recipe makes about a dozen 4 inch pancakes.
