Ghislaine's Cake 1 orange pekoe tea bag 1 1/4 cup boiling water 1 cup sugar 3/4 cup honey 2 1/2 teaspoons baking soda 1/4 teaspoon salt 3 Tablespoons rum or 1 1/2 teaspoons imitation rum extract and 2 Tablespoons water 1 teaspoon anise seed 2 teaspoons cinnamon 4 cups flour Soak tea bag in boiling water for 5 minutes. Put sugar, honey, soda and salt into a bowl, pour on tea and stir until sugar has dissolved. Add rum, anise seed and cinnamon. Add flour gradually to tea mix, stirring constantly until smooth. Pour into a buttered and floured ring mould or loaf tin, that will hold at least 6 cups liquid. Bake at 450 degrees F. for 10 minutes, then reduce heat to 350 degrees F. for about 35 minutes for a ring mould or 50 to 60 minutes for a loaf tin. Remove from tin and cool. Makes 1 loaf. Serve slices spread with butter or honey.
