Curried Rice 2 cups of either canned vegetable broth, chicken broth or beef broth (use 1 can of soup, and add water to make up the 2 cups) Add to the broth in a saucepan, 1 cup of uncooked basmati rice 1 cup of diced red, yellow and/or green pepper 1/2 cup raisins 4 green onions, sliced 1 Tablespoon butter or margerine 1 and 1/2 teaspoons curry powder, depending on tastes Stir, then bring to a boil over high heat. Reduce heat to simmer, and cover with snug fitting lid. Allow to cook about 14 minutes. DO NOT PEEK. Keep the lid on, and remove from heat. Allow to stand for 5 to 10 minutes then serve. Makes 3 to 4 servings.
