Berry Cake 1 package of cake mix, either chocolate, yellow, or white 1 cup sour cream 2/3 cup icing sugar 3 cups Cool Whip prepared topping mix (or use Dream Whip, prepared) 1 cup sliced strawberries 1/2 cup blueberries Prepare cake mix in two 9 inch cake pans, following the package directions. Bake as directed, cool. Remove cakes from pans. Allow to cool completely. Beat sour cream and icing sugar in a large bowl until well blended. Add the Cool Whip and mix well. Set aside. Cut each cake in half horizontally to make 4 layers in total. Place the first round on a large plate. Spread with about a 1/2 cup of Cool Whip mixture. Top with about 1/2 cup of the berry mixture and an additional 1/2 cup of Cool Whip mixture. Repeat with the next 2 layers. Top cake with the remaining Cool Whip mixture. Refridgerate until ready to serve. Store leftovers in the fridge.
