Banana Poppy Seed Loaf 1 cup mashed bananas 1/2 cup brown sugar 1 egg, beaten 1/4 cup oil 1/2 cup milk 3/4 cup flour 1 cup whole wheat flour 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 2 T. poppy seed* Combine banana and sugar. Mix together egg, oil and milk. Add to banana mixture. Combine remaining ingredients. Add to banana mixture, and stir until just moistened. Spoon batter into a greased loaf pan. Bake at 350 F. for 60 to 70 minutes. Cool 10 minutes. Remove from pan to wire rack. Wrap and refrigerate up to one week or freeze up to 2 months. *You may substitute about a 1/2 c. or less of chocolate chips for the poppy seeds.
