Bacon Cheese Potatoes 8 to 10 medium potatoes [2 1/2 to 3 pounds] 1/2 cup finely chopped onion [sauteed until soft, if desired] 1 pound grated cheddar cheese 1 cup mayonnaise 1/2 pound bacon, cooked and crumbled 3/4 cup sliced ripe olives [optional] Peel potatoes. Place in a saucepan and cover with water. Cook until tender but firm. Drain and cube. In a bowl, mix potatoes with onion, cheese and mayonnaise and bacon. Transfer to an ungreased 13"x9"x2" baking dish. Cover and bake at 350 degrees F. for 30 minutes, or until heated through. Makes 8 to 20 servings.
