Apple Bread Pudding with Maple Rum Sauce 4 cups bread cubes 2 cups pared, chopped apples [we like to use about 3 cups] 1/2 cup raisins [we like to use about 1 cup] 3 eggs 1 can Eagle Brand Sweetened Condensed Milk 1 3/4 cups hot water 1/4 cup melted butter 1 teaspoon maple extract Heat oven to 350 degrees F. Combine bread cubes, apple and raisins. Place in greased 9" square baking pan. Beat eggs and stir in the milk, hot water, butter and maple extract. Pour over bread mixture. Bake 60 to 70 minutes, until knife inserted in center comes out clean. Serve warm, with maple rum sauce.... Maple Rum Sauce* *we like to double this recipe - lots of sauce! 1/4 cup melted butter 1 cup brown sugar 1/2 cup whipping cream 1 1/2 teaspoons rum extract 1 1/2 teaspoons maple extract Melt the butter in a saucepan. Add the brown sugar and whipping cream. Cook and stir over medium heat until it boils. Boil 2 to 3 minutes. Remove from heat, stir in flavorings. Enjoy!
